Put the couscous in a large bowl, pour the boiling broth over it and let it steep for 5 - 10 minutes. Stir every now and then with a fork. Mix with lemon juice, herbs, salt and pepper.
Carefully fold in the feta cheese (pickled feta cheese is very suitable) with oil, tomatoes and spring onions and season to taste.
Pure with bread or as a side dish, e.g., Serve with the grill menu.
