Partially frozen fruit juice gives the cocktail an extraordinary, refreshing texture. Ideal in the recipe is a combination of cranberry and apple juice, thanks to which the taste of the drink is moderately sweet. Ginger ale is not a beer, but a kvass-like soft drink made from ginger, lemon, sugar, and yeast.
Pour the cranberry juice into a flat dish and place it in the freezer for about 2 hours to form a layer of ice crystals around the edges.
Stir with a fork and return to the freezer for another 2-3 hours until the juice is almost completely frozen. Pour the apple juice into a saucepan, add 2 cinnamon sticks and bring to a boil (do not boil). Pour into a jug and cool. Take out the cinnamon (don’t throw it away). Chill the apple juice well.
Combine (quickly, just until smooth) the frozen cranberry juice and apple juice in a food processor. Pour the mixture into glasses and top up with ginger ale. Garnish with cranberries. Use cinnamon sticks to stir the cocktail.
