Mix the flour, milk, quark, eggs and a pinch of salt to form a smooth dough. Let soak for about 10 minutes. Melt some butter in a pan and spread about 2 tablespoons of batter in each pancake. Fry the pancakes light brown on both sides, then arrange on plates, sprinkle with sugar and cinnamon and, if necessary, serve with applesauce. Delicious.
