Peel the horseradish root and grate it very finely. Be careful, your eyes burn more than when you cut onions!
Whip the cream until stiff. Add the lemon juice, salt, pepper and sugar (only a pinch of sugar for lactose-free cream) to the horseradish and place in a sealable container.
Now fold in enough whipped cream until the desired consistency is achieved. Put the lid on and put it in the fridge.
