Wash the potatoes thoroughly and cook them in a little water in the skin for about 20 minutes. Drain and peel.
Melt the butter in a saucepan.
Meanwhile, finely crush the garlic. Peel the onion and cut into very fine cubes. Sweat in the butter until translucent. Add salt and pepper and fry the peeled potatoes in it. Pour in the cream, let it boil and sprinkle everything with parsley.
Cream potatoes taste good with pan-fried meat, fish and mixed salads.
