Instructions

  1. Fry the onions in hot olive oil until they are brown (but not black!), Add the zucchini cubes and garlic and fry briefly. Then fill up with boiling broth and simmer with the lid open for about 20 minutes. Puree well with the hand blender.
  2. Stir in the herb cheese until it has dissolved. Fold in the Julienne strips and simmer for another 5 minutes, season with salt, pepper and nutmeg.
  3. Garnish with crème fraîche + a little parsley and serve immediately in preheated plates or cups. Crispy farmer`s bread or baguette bread is served with it.
  4. If you like, you are welcome to take twice the amount of herbal processed cheese.
  5. As a modification, you can also fry minced beef first until crumbly and then continue as described above. The soup would then be served as the main course.
  6. Instead of zucchini, cauliflower / broccoli or carrots also go very well with it.
