Instructions

  1. Beat 3 egg yolks with 200g sugar until frothy. Add the grated lemon zest with the orange - lemon juice and the white wine. Season to taste with the rum.
  2. Dissolve and add gelatine. Let rest until the mass becomes thick. Make egg white from the 3 eggs and fold in with the whipped cream.
