Instructions

  1. Divide and hollow out the pumpkin, then peel and roughly scrape. Finely chop the onion and garlic.
  2. In a tall saucepan, let the onion and garlic brown until golden, sauté the paprika powder and tomato paste. Deglaze with the vinegar and pour in some broth. Add the pumpkin, season well and add the finely chopped herbs.
  3. Simmer for a few minutes until the pumpkin is tender. At the end of the cooking time, fold in a mug of sour cream. If you like, you can refine the pumpkin with fresh dill.
