Fry the finely diced onion and the finely chopped carrot in a sufficiently large saucepan in olive oil on the highest setting, shortly afterwards add the minced meat and fry until it looks cooked through. Season well with salt and pepper. Add the potatoes cut into small cubes and fry briefly. Put the vegetable stock and the tomatoes in the saucepan and bring everything to the boil. Now set the stove much smaller and let it simmer for about 35-40 minutes. Season to taste and, if necessary, add seasoning.
