Creamy egg yolks with honey on the stove - whip until frothy and then beat cold.
Then fold in the whipped cream, pour the mixture into a tin lined with cling film (I`ll use a small loaf tin) and let it freeze.
Possibly a berry sauce with it.
Let thaw for at least 1/2 to 3/4 hours before serving.
I have also taken other honey before and it may not have to be lavender honey, but it should taste a bit tart otherwise I think the ice cream will be too sweet.
