Instructions

  1. Cut the onion into small cubes. Clean the mushrooms and cut them into slices. Wash and chop the parsley.
  2. Put the oil or butter in a saucepan. First sweat the onions until they are translucent, then add the mushrooms and fry them well hot, stirring occasionally. A dark sentence is allowed to develop on the floor, which gives the taste. Lower the temperature a little, add the tomato paste and dust the mushrooms with flour, fry for another minute.
  3. Add the cream and Madeira and let it boil down, then add water and simmer on low heat. Season the sauce to taste with salt, pepper and nutmeg and then sprinkle with parsley at the end.
  4. Homemade spaetzle taste particularly good with it.
