Clean the lettuce, cut into individual leaves, wash and drain or spin dry. Remove the hard ribs and tear the leaves into small pieces.
Mix the cream with lemon juice and sugar until the sugar has dissolved. Peel the mandarins and divide them into wedges, cut them into small pieces and fold them in.
Place the iceberg lettuce on a plate and spread the tangerine sauce over it or mix the salad with the sauce in a large bowl.
