Dzatziki (tzatziki, tzatziki) is a wonderful cold appetizer sauce of Greek cuisine, which in each region of the country has its own characteristics of preparation. I am sharing the secret of making the Cretan version of yogurt and cucumber sauce.
To prepare dzatziki, let’s prepare food. The yoghurt should be thick, the cucumber should be fresh.
Let’s start by grating a cucumber on a medium grater.
And now I am sharing a secret: you will get the best dzatziki if you squeeze the grated cucumber pulp from the liquid very well. Put only the squeezed cucumber mass in a bowl with yogurt.
Pass the garlic through a press and add to the rest of the ingredients.
Squeeze the juice of half a lemon into a bowl. Mix everything well.
Second secret: add olive oil to dzatziki, mix all ingredients well.
At the very end, we try tzatziki for salt, add, if necessary. Be sure to add dried oregano to the dish.
Ready-made tzatziki (tzatziki, tzatziki) are served as a sauce for meat or as a cold snack with fresh bread or pita cakes.
