Instructions

  1. Crumble the flour, a pinch of salt and butter and quickly process into a dough with low-fat quark and leave to rest in the refrigerator overnight. (If you want, you can tour it 2-3 times as well as puff pastry, but it doesn`t have to be!)
  2. Take the dough out of the refrigerator and let it sit for about 15 minutes at room temperature.
  3. Preheat the oven to 200 degrees circulating air.
  4. Then roll out the dough to approx. 3-4 mm thick and rub out squares of approx. 10 x 10 cm. Put a dollop of apricot jam in the middle, fold into a triangle, fold over the triangle point and shape into croissants.
  5. Place on the baking sheet lined with baking paper and let rest briefly (10th min). Then brush with the egg yolk and milk mixture.
  6. After about 20-25 minutes of baking - the croissants should already be nice and brown - take them out of the oven and let them cool on a rack.
  7. Mix equal parts powdered sugar with vanilla sugar and add sugar.
