Cut the pumpkin into slices, remove the seeds and, for this dish, also cut off the skin with the peeler.
Mix the olive oil with thyme, herb salt and chilli flakes and brush the pumpkin slices with it. Let rest for about 30 minutes.
Heat the grill pan and place the pumpkin slices in the pan, turn once, fry for approx. 4 minutes on each side over a low heat. For the last 3 minutes I put a pan lid on the pan, not completely closed.
