Halve the eggs, remove the yolks and place them in a bowl. Mix with a little water, vinegar and mustard, as well as salt and pepper to make a dressing.
Cut the sausages and the pickled cucumber into thin slices and dice the egg white. Now add all of this to the dressing together with the capers. If necessary, season again.
Cut the cucumber and tomato into slices and spread them on the edge of a plate like a roof tile, sprinkle with the chives and season with herb salt and pepper. Now put the salad in the middle of the plate.
