Mix the peanut butter, mustard, water, vinegar and maple syrup thoroughly with the hot water. Peel the garlic and put through the press, stir into the dressing and season well with chilli flakes, pepper and a little herbal salt.
Peel the peanuts, remove the brown skin and chop into smaller pieces. Wash the cucumber and slice it (I had a plane with a wavy knife). I didn`t peel the cucumber.
Mix the cucumber slices thoroughly with the dressing and leave to rest for about 15 minutes. Finally, sprinkle with the chopped peanuts.
