Instructions

  1. Chop the onion and fry in a little olive oil. Add the chopped garlic and chilli, fry a little, deglaze with tomatoes and reduce to a strong tomato sauce. Season to taste with parsley or other fresh herbs, salt and pepper. I can only recommend that you simply cook your favorite tomato sauce - everyone has their preference.
  2. At the same time, cook the rice as a side dish. Just before the sauce and rice are ready, peel the bananas and cut them lengthways with a knife so that each banana is halved lengthways. Then fry these banana slices in a small pan with a little butter on both sides over medium heat until they have a golden sheen.
  3. Fry two fried eggs. The yolk should still be liquid inside.
  4. Place the rice in the middle of the plate. Arrange two halves of bananas so that they hug the rice, i. H. put on the edge of the plate. Pour tomato sauce over the rice and place a fried egg on top of the rice. Pepper and salt. Finished.
  5. Sufficient with fresh, possibly roasted baguette, so that the fried eggs can be dunked.
  6. The recipe sounds a bit strange, but the combination of tomato, banana and egg is just delicious! Very simple recipe, only requires a little coordination at the beginning so that rice, sauce, banana and egg are ready at about the same time and can be arranged immediately.
