Wash the lamb`s lettuce, cut coarsely if necessary and place in a large bowl. Wash the tomatoes, cut in half or quarter (depending on size) and add. Peel the cucumber and carrots and grate them into the salad (the cucumbers are coarser, the carrots are more fine).
Mix the pumpkin seed oil, balsamic vinegar, mustard, salt, pepper and sugar together vigorously. Pour the dressing over the salad and mix everything together.
Roast the sunflower seeds in a pan without fat, tossing them occasionally and add them to the salad with the cranberries. Mix or add to the salad as a topping.
