Instructions

  1. Wash the cucumber and cut it in half lengthways and remove the seeds with a teaspoon (otherwise they make the salad watery) then finely grate the cucumber (can also be a little coarser).
  2. Cut the spring onions into rings. Also grate the ginger finely (if fresh). Pluck the leaves from the mint and chop finely.
  3. Mix the yogurt with the (ingredients) cucumber, ginger, onions, mint, lemon juice and season with salt / pepper. Then let it sit in the refrigerator for at least 1-2 hours covered with cling film and season if necessary. Covered because otherwise it will take on the taste of any other dishes!
  4. If you like garlic with it, you can do it.
  5. This salad goes very well with grilled dishes in summer because it has a very fresh effect on the sense of taste.
