Instructions

  1. Peel the cucumber, cut in half lengthways, remove the seeds. Slice the cucumber halves or cut into fine slices.
  2. Clean and wash the spring onions and cut into fine rings. Pluck the mint leaves and cut into fine strips.
  3. Mix a dressing from vinegar, grenadine, oil, salt and pepper, mix with the cucumber slices, spring onions and mint, let it steep a little.
  4. In the meantime, halve the pomegranate, remove the seeds and fold into the cucumber salad. Season the salad to taste.
  5. Sprinkle the diced feta and possibly coarsely chopped walnuts on top before serving.
  6. Note: Grenadine is sometimes very sweet, so dose carefully first.
