- Peel the cucumber, cut in half lengthways, remove the seeds. Slice the cucumber halves or cut into fine slices.
- Clean and wash the spring onions and cut into fine rings. Pluck the mint leaves and cut into fine strips.
- Mix a dressing from vinegar, grenadine, oil, salt and pepper, mix with the cucumber slices, spring onions and mint, let it steep a little.
- In the meantime, halve the pomegranate, remove the seeds and fold into the cucumber salad. Season the salad to taste.
- Sprinkle the diced feta and possibly coarsely chopped walnuts on top before serving.
- Note: Grenadine is sometimes very sweet, so dose carefully first.
