Instructions

  1. Because grate the cheddar cheese, cut the cucumber into thin slices. Bring the broth with the thyme to the boil. Cook the cucumber slices in the broth until soft and season with the spices. Thicken with cold mixed flour. Before serving, add the cheddar cheese to the hot soup and garnish with the pickled cucumber quarters.
