Dice the onion, bell pepper, potatoes and carrot. Peel the ginger and grate finely.
First fry the onion with the paprika, curry and ginger, then add the vegetable stock. Now cook the potatoes and carrots in it, just before they are soft (about 10 minutes), add the lentils and tofu.
When the potatoes and carrots are soft, add the coconut milk and lime juice. Season to taste with pepper and salt. Bread also tastes very good (e.g. sesame rings).
