Instructions

  1. Froth the butter, sauté the leek and shallot cubes. Dust with curry and add the diced fruit. Steam briefly, deglaze with the chicken stock and add the cream. Simmer gently for 10-15 minutes, mix well with the hand blender, season with salt and pepper. If the soup is too thick, thin it with a little chicken stock.
