Instructions

  1. Wash the chicken breast fillets thoroughly and pat dry, season with salt, pepper and fry until golden brown. Then let the fillets cool down and cut into fine strips. Cut the peeled eggs into cubes. Put the eggs and meat in a large enough bowl. Cut the mango meat into small cubes, wash the spring onions and cut into fine strips.
  2. Wash and finely chop parsley, wild garlic and chives, add everything to the eggs and meat. Mix the curry powder and paprika powder (a little) with the yoghurt. Season to taste with salt and pepper. Pour the sauce over the salad and serve.
  3. It goes well with fresh ciabatta or crispy baguette.
