Allow the endive salad to remove the bitter substances in warm water for 30 minutes.
Remove the leaves from the stalk, wash in cold water and cut into narrow strips. Steam the onions in the oil until they are translucent and let the strips of lettuce collapse while dripping wet.
Stir in the spices and let everything simmer for about 10 minutes with the lid on, adding a sip of water if necessary so that nothing burns.
Finally stir in the creme fraiche and season to taste again.
Meatballs, sausages and everything pan-fried with mashed potatoes taste good with them; Fried or scrambled eggs are also ideal.
