Instructions

  1. 1. Finely chop the onions, garlic and ginger. Cut the chilli into thin rings. Wash the vegetables, peel the carrots and cut everything into bite-sized pieces.
  2. 2. Fry the onions, garlic and ginger in a little rapeseed oil. Add the carrots and peppers after 3 - 4 minutes, fry briefly and then deglaze with the vegetable stock and coconut milk. Spice up. With the lid closed, let the curry simmer gently. After 10 minutes, add zucchini, broccoli and chilli. Let the curry simmer for another 10 minutes until the vegetables are soft. In the last few minutes, the vegan Maultaschen are added to the curry.
  3. 3. Season again to taste. Stir lime juice and chopped parsley into the curry.
  4. Tip: Of course, it also tastes good with vegetable or meat dumplings!
