Instructions

  1. Cut the vegetables into equal pieces and fry them with a little coconut oil.
  2. The sweet potatoes can but do not have to be peeled. Cut the sweet potatoes into cubes and add to the vegetables. Simmer for 5 minutes.
  3. Chop the garlic, chilli, coriander, fennel and ginger and add to the vegetables and sweet potatoes. Season with salt, pepper, turmeric and the bay leaf. Add a little water and cook for about 15 minutes.
  4. In the meantime, cut the leek into rings and add to the vegetables with the peas. Fill up with coconut milk and cook over a low flame in 5 minutes - done.
