Heat some oil in a saucepan, fry the onions, garlic and ginger in it. Then add all the spices except salt and roast, stir well so that nothing starts to stick. Now the lenses are added. I take coffee cups, not pots. Mix everything together, add approx. 250 ml of water and simmer for approx. 15 minutes until the lentils are soft but not mushy, if necessary. add some more water. Season with salt only at the end.
Then I serve the plates with a dash of yogurt, freshly chopped coriander and a few onion rings.
