Instructions

  1. Pick a small basket (approx. 4 handfuls) full of flowers at lunchtime. Put everything on paper so that the little reptiles can escape. Then pour 2 liters of water over the flowers with the green basket in the pot, add the sliced lemon and bring to the boil briefly.
  2. If you have allergies or children, you can use the fresh flowers without a basket. But with the cups, there are more active ingredients in them!
  3. Cover the whole thing, cover it with the lid and let stand cool for 48 hours.
  4. Put everything through a sieve and collect the brew. Add the white sugar and also add the brown cane sugar. Bring to the boil and then reduce for approx. 1-1 1/2 hours, stirring constantly so that it becomes thick. Always do a gel test. When the mixture is thick enough, like honey, take the pot off the fireplace, let it cool down a little and only now add the honey.
  5. Pour the mixture into hot, washed-out twist-off jars and close with the lid, let stand upside down for approx. 5 minutes and the honey is ready.
  6. I usually take it at the beginning of a cold. But it also tastes great on bread and rolls.
