- Cut the dates into small pieces, put them in a saucepan with the other ingredients and bring to the boil.
- Let simmer over low heat until only 1/3 of the original amount is left. This can take 2 hours. Stir occasionally.
- At the end of the cooking time, strain the liquid through a hair sieve and squeeze it out vigorously with a spoon.
- Fill the liquid in pretty bottles. The balsamic reduction becomes even thicker after a while, so that it is then ideal for decorating.
- If it gets too thick, just add some red balsamic vinegar and shake vigorously.
