Instructions

  1. Soak 75 g of ground oat bran with 100 ml of cold milk the evening before and leave to stand in the refrigerator overnight (12-18 hours). The next day, stir the first 7 ingredients in the order given (egg yolks, sugar, vanilla sugar, rum, orange peel powder, yoghurt and salt) until the volume has roughly doubled.
  2. Stir in the soft butter (creamy soft) and the quark - it`s up to you whether it`s lean or with 20% fat. Then stir in the soaked oat bran and then both flours, the baking powder and the rest of the milk.
  3. Depending on how small or large the eggs are, a little more or less flour may be needed. In any case, the dough must fall off the spoon quite thickly. Let soak for 1/2 hour. In the meantime, beat the egg whites to stiff snow and fold in after the resting time.
  4. Brush the hot waffle iron with a little oil and fry the waffles until golden. Allow to evaporate on a grid (not on the plate, otherwise they will get moist).
  5. The waffles are served with powdered sugar, hot cherries, Nutella, If the children are eating, switch to the rum flavor. The types of flour can be varied in favor of one or the other type - I took a little more white flour, since the healthy oat bran is already in it (so that it doesn`t get too healthy!).
