Peel, quarter and core the apples and cut into wedges. Bring sugar, lemon juice, apple juice and apple wedges to the boil in a saucepan with the lid closed and let simmer for 3 - 5 minutes.
Stir the pudding powder with 3 additional tablespoons of juice until smooth. Pour into the compote while stirring and cook for 1 minute. Let the compote cool down. It tastes even better with a dash of vanilla sauce!
