Cut the beef into small pieces and bring to the boil briefly with water and two tablespoons of vinegar; Pour off the water and rinse the meat briefly.
Chop the vegetables and put them together with the meat in approx. 2 liters of water, season to taste.
Cook for about 40 minutes (on a medium flame, try whether the vegetables are good) and add the noodles. Depending on how you like the soup, add more or less noodles (we like it a little thicker).
Let simmer again for 5 - 7 minutes and then sprinkle with the fresh parsley and serve.
