Instructions

  1. Wash the fish thoroughly and pat dry with kitchen paper. Line a baking sheet with aluminum foil, fold up the edges. Preheat the oven to 180 degrees.
  2. Score the fish 4-5 times on each side with a sharp knife and generously salt and pepper on the inside and outside. Pluck the leaves from the washed parsley and set aside. Fill the fish with the stalks, lemon wedges and possibly butter flakes.
  3. Spread a good dash of olive oil on the tray, place the fish on it and also drizzle with a little olive oil. Place a few lemon wedges on top.
  4. Bake on the middle rack for about 30 minutes.
  5. Use the brew in the foil as a sauce.
  6. This goes well with a green salad with sour cream, boiled potatoes, fresh baguette and parsley pesto.
