Harvest or buy about 6 stalks of fresh peppermint. I only use the top ends or the freshest leaves. Since I have enough mint in the garden to harvest fresh every day, I can afford this waste.
Place the leaves or stems in a pot, add the rock candy and lemon juice and pour a liter of boiling water over them. Let it steep for 10-12 minutes, depending on your taste.
For the iced tea variant, leave the leaves in the pot and let the tea cool down. Add the lemon wedges and the ice or apple juice cubes and season to taste with sugar. Cool and enjoy.
