Instructions

  1. Dissolve the yeast in lukewarm water, add the flour and potato flakes, then add the salt. Process everything into a firm dough with the hand mixer and leave to rise covered in a warm place. (The dough is very firm and hardly sticks.)
  2. When the volume has doubled (about 1 hour), knead the dough vigorously again (I also do this with a hand mixer) and place on a baking sheet (parchment paper or baking spray underneath).
  3. Put half of the olive oil on the dough and press it flat on the baking sheet. Make indentations with your fingers and drizzle with the remaining olive oil. Sprinkle more or less coarse sea salt over the dough to taste.
  4. Let the dough rise for another 30 minutes in the oven with the light switched on (because of the heat).
  5. Bake the bread in the oven at 200 degrees for 20 minutes.
  6. Tastes great with a chickpea dip or for grilling.
