Soak the dates in water. Using a stand mixer, finely grind the walnuts on the highest setting until they have the consistency of flour. Add a pinch of salt.
Pour off the soaking water and gradually add the dates to the blender until it becomes a fine paste. Add the cocoa and mix well. Put the mixture in a bowl. Roughly chop and knead the almonds. The mass is evenly 1 cm thick or if you like in a baking dish or similar. Press and place in the refrigerator for at least 1 hour.
Before enjoying, cut into small or larger rectangles.
Tip: You can vary the ingredients in this recipe and e.g., use other nuts or put desiccated coconut on the brownies.
