I always use good frozen food for soup vegetables. It contains 10 different types of vegetables and is of great quality.
I put the vegetable stock and the tomatoes in a large saucepan and bring the liquid to a boil. Now I add the soup vegetables and let the vegetables simmer in the broth for about 5 minutes. Then I add the tortellini and let it simmer for another 20 minutes. I always choose dried tortellini because they are smaller and don`t rise in the soup as much as fresh ones. Now the soup is seasoned with salt, ground pepper and fresh Italian herbs, depending on your taste.
A fresh baguette or a delicious ciabatta bread goes well with it.
The food is sensationally inexpensive. With bread it costs less than 5 euros for 4 people together (my variant with home-baked baguette 3 euros).
Tip: if you don`t like the vegetarian option, you can enhance the soup with meatballs. These make the soup really spicy.
