Instructions

  1. First lightly toast the almonds in a pan without fat and let them cool on a plate. Wash, peel, quarter, core and cut the apples into eighths.
  2. For the dough, beat the eggs with the hand mixer on the highest setting in 1 minute until frothy. Mix sugar and vanilla sugar, sprinkle in 1 minute, then beat for another 2 minutes.
  3. Mix the flour and baking powder, sift half of it onto the egg cream, briefly stir in on the lowest setting. Work in the remaining flour mixture with yoghurt and oil in the same way.
  4. Put the dough in a springform pan (26 cm, with baking paper) and smooth it out. Spread the apple pieces on the dough and sprinkle with the almonds. Put the tin on the wire rack in the oven. Bake at around 180 ° C (top / bottom heat, hot air: around 160 ° C, gas: level 2 - 3) in a preheated oven for around 25 minutes.
  5. Place the form on a cake rack. Loosen and remove the springform rim. Let the apple cake cool on the springform pan and place on a cake plate.
