Soak the elderflower in the apple juice for about 2 days, then strain through a cloth.
Mix the fructose with the Gelfix and add to the juice and boil for at least 3 minutes.
Pluck some elderflower into the prepared twist-off glasses, then pour the hot jelly on top and turn it upside down for 5 minutes. Now turn the glasses over and over again so that the flowers are distributed throughout the glass when it cools.
