Instructions

  1. Wash the aubergines, zucchini, tomatoes, peppers and onions and cut into slices. Then line up in a large baking dish and sprinkle some parsley and basil (both chopped) between them. Season with salt and pepper. Press the garlic, mix with the olive oil and then pour the mixture over the vegetables. Cover the baking dish and bake in the preheated oven at approx. 170 ° C for about 2 hours.
  2. Note: the dish is served cold. It is therefore also very suitable as part of a buffet or as a side dish that can be prepared before the actual main course is prepared.
