Instructions

  1. Wash or clean the apples and fennel. Use the fennel greens to flavor. Cut the unpeeled apples into eighths and cut into thin slices. Also cut the fennel into very thin slices or use a cucumber slicer. Drizzle both with the lemon juice.
  2. For the dressing, mix the yogurt with the remaining ingredients and stir well.
  3. Fold in the apples and fennel.
  4. The salad goes well with patties (e.g. couscous patties) or simply enjoyed as raw vegetables.
