Cook rice (leftover rice from the day before is also very good).
Let the oil get hot in a pan, fry the diced paprika and pineapple pieces. Add rice and fry for a few minutes. Add coconut milk, cream and pineapple juice, bring to the boil, then carefully stir in the mandarins with the juice. Season with salt and pepper, stir in curry paste and serve.
Tips:
Preparation in a wok is also possible.
If you don`t want to prepare the dish vegetarian, you can use chicken or turkey for the curry.
