Boil the potatoes in salted water, let them cool, peel and mash them while adding the oil. Chop the onion into very fine cubes, cut the lovage very finely and mix all the ingredients together. The quantities are first of all guidelines, you have to vary that according to your own taste. Season to taste with salt, pepper and sugar. If there is no lovage, add a few spritzes of Maggi seasoning (although I don`t use it because of the flavor enhancer).
That was it.
If you have the appropriate endive salad with it, wash it, remove the hard stalk and cut into fine strips. Mix with the dressing just before serving. This recipe is from my mother-in-law.
