Instructions

  1. For the cookie dough, stir the softened butter with the sugar and vanilla sugar until creamy. Then the egg is added. The flour is mixed with the baking powder and salt in a bowl and then added in portions to the butter egg mixture. Everything has to be kneaded until a uniform dough is formed. Then it is wrapped in cling film and has to rest for half an hour.
  2. Then the dough is best rolled out between two layers of baking paper to 3 - 4 mm and the biscuits cut out of it. The cookies are then baked at 180 ° C for 12-15 minutes.
  3. Immediately after baking, a hole is made for 1/3 of the cookies with a smaller cutter. How many are cut out depends on whether you want two or three biscuits with a hole in the middle. You have to do this relatively quickly because the cookies harden as they cool and then break.
  4. As always, we use royal icing or egg white spray glaze for gluing, because it dries very quickly and holds very well. To do this, egg white is beaten until stiff, then the powdered sugar is added and stirred in well. Then the glaze should be whipped for about a minute and then possibly colored. If you want to do without raw egg white, you can also use melted chocolate or frosting.
  5. When the cookies have cooled completely, they can be put together. A whole cookie is used as the bottom, then one or two (depending on how big the box should be) are placed, which are cut out in the middle, the cookies are glued together with the royal icing, which is attached to the edge with a piping bag of the lower biscuit is splashed. You can fill the biscuits with small chocolate chips or other sweets. The lid is then also glued on or, as with the cookie heart boxes, placed on it as a lid.
  6. As always, you can let your imagination run free when decorating the lid. We colored part of the glaze with some food coloring and then spread it on the biscuits with a piping bag and a knife. There are many ways to decorate the lids, such as: B. with glitter sugar, chocolate lentils, coconut crumble, etc.
  7. Before you give away the cookies, the icing should dry out for 1 - 2 hours.
  8. Makes 5 - 8 servings.
