Instructions

  1. Wash eggplants well, do not peel off the skin and leave the stem on!
  2. Prick the aubergines all around with a fork and cook in the oven until they are soft. Let cool slightly and carefully peel off the skin.
  3. Slightly flatten the aubergines, you can hold them tightly at the top of the stem.
  4. Make a dough out of eggs, flour and salt. Hold the flattened aubergines by the stem and turn them in the egg. Fry in the oil until brown.
