Instructions

  1. Beat the egg, salt and nutmeg well. Boil milk, slowly stir into the egg and strain through a sieve. Pour into a buttered casserole dish and poach in the oven in a water bath over moderate heat. Cooking time approx. 20 minutes.
  2. Do not fall until completely cold. Divide into 0.5 cm thick slices and cut them into even diamonds.
  3. Worth knowing: Eggs bind twice the amount of liquid, boiling milk shortens the cooking time by a third, moderate heat gives a smooth egg prick, high heat results in a product with holes.
