Beat the egg, salt and nutmeg well. Boil milk, slowly stir into the egg and strain through a sieve. Pour into a buttered casserole dish and poach in the oven in a water bath over moderate heat. Cooking time approx. 20 minutes.
Do not fall until completely cold. Divide into 0.5 cm thick slices and cut them into even diamonds.
Worth knowing: Eggs bind twice the amount of liquid, boiling milk shortens the cooking time by a third, moderate heat gives a smooth egg prick, high heat results in a product with holes.
