Hard boil 5 eggs, peel and cut into slices. Cut the chicken breast into strips, sear them and then let them cool. Peel and dice the mango. Cut the spring onions into rings.
Put a quarter of the mango cubes and 2 teaspoons of curry paste in a blender and puree to a paste.
Make a mayonnaise from egg, mustard, lemon juice and vegetable oil. Put the mayonnaise in a bowl, add the mango curry mixture and stir everything with the whisk. Season to taste with salt. Add the remaining mango cubes, the chicken, the spring onions and the cut eggs.
Mix everything well and let sit in the refrigerator for just under an hour.
