Instructions

  1. Boil the eggs hard and rinse in cold water, let them cool down.
  2. Peel the cucumber and cut in half lengthways. Remove the seeds with the pulp with a spoon. Finely chop the cucumber halves.
  3. Cut the cress and wash it, let it dry.
  4. Peel the eggs, peel off the egg whites and finely chop them. Mash the egg yolks with a fork and mix with the quark, sour cream and mustard.
  5. Stir in the egg white cubes, cucumber cubes and cress into the quark mixture, season with salt and pepper.
  6. Spread the spread on the bite-sized pieces of bread and sprinkle with paprika or curry powder.
  7. Serve on a platter with an aperitif.
